In chemistry, the structure and definition of “peptide” is straightforward: two or more amino acids joined by peptide bonds. Amino acids are relatively small molecules: the smallest is glycine, with just two carbon atoms; one of the carbons is in the acid group (COO-) and the other has the amino group (NH4+) attached to it. A long time ago, I used to teach a course on food biochemistry. I thought food technology was an honest profession but then I did not know about Maraschino. Maraschino is a liqueur obtained from the distillation of Marasca cherries, made in Zadar, now a Croatian city but then part of the Republic of Venice. Whole cherries preserved in this liqueur were called Maraschino cherries. Start with facts, if possible with facts that have been in the news recently. In this case: the bacterial flora in the skin is important (just think “acne”) and it varies with the environment (in this case, us). 2.Find an attractive organism and see where you can take it.
