Apple pectin is a complex polysaccharide that contains rhamnose, a methylated pentose sugar. Apparently, fibroblasts contain receptors for rhamnose, and when rhamnose binds to these receptors it results in increased synthesis of collagen and strengthened epidermal-dermal junction. Apple pectin may help thicken skin thinned by aging.
